The history of the Taittinger maison, marked by great initiative, dates back to the beginning of the twentieth century. The most important is “the blend, not the harvest“: Laurent-Perrier is the only Maison whose most prestigious and demanding Cuvée, Grand Siècle, is a blend of 3 exceptional vintages to recreate the perfect year.
Affirming a particular style, which does not succumb to trends, the Maison develops a range of tasty, powerful and balanced Champagnes. The aromatic intensity is their common plot, and the search for freshness and minerality, their architecture. To elaborate its wines, Philipponnat uses the best grapes coming, for the most part, from the Premiers and Grands Crus and puts a point of honor in always harvesting the ripest grapes compared to the average of Champagne.
Maison Billecart-Salmon has chosen to return to traditional methods. The Maison’s champagne is the result of the know-how of its men, who take care of a 100-hectare estate. The grapes come from 40 Champagne crus, planted on a total area of 300 hectares. The grand crus of Pinot Noir, Chardonnay and Pinot Meunier coexist in this territory that stretches between the Montagna di Reims, the Côte des Blancs and the Marne Valley.

It was born from the desire of Feudi di San Gregorio to experiment the Classic Method on the grapes of the Campania tradition: Greco, Aglianico and Falanghina, which combine a jovial and irreverent character with the natural vocation to be sparkling. The Classic Method or Champenoise Method is a technique with over four centuries of tradition, which consists in the refermentation of the wine in the bottle, given by the addition of sugar and yeast, with the consequent transformation of the wine into sparkling wine.

This is why each bottle is a unique episode. The Segnana grappa is born in part from pomace obtained from the soft pressing of the grapes with which the Ferrari is created, rich in must and aromas. The distillation system is, in accordance with the Trentino tradition, strictly discontinuous in a steam bain-marie, but enriched by innovative technical devices. Unique and extraordinarily effective is the marc conservation system by means of underground tanks with hydraulic seal.
